Directions

For the tart, in the mixer with the paddle attachment, we beat all the ingredients for 5 minutes. When they homogenize, we wrap our dough with plastic wrap and we put it in the fridge for about 1 hour. For the cream, we boil all the liquids together (milk, sour cream, orange juice with half the sugar and the cinnamon powder. In a bowl, we beat the egg yolks with the other half of sugar, we add the flour and the powdered pastry cream. We pour the milk with the cream and after they boil in the mixture with the eggs, we mix well. Then we return them to the hotplate until they boil, and then we mix well. We remove from the hotplate and we put our cream to cool in the bucket of the mixer with the whisk attachment, adding at the same time when it is still hot, the gelatin after we have soaked it first in cold water. We let the cream freeze in the fridge. Then we make small tarts and we bake them for about 10-12 minutes at 1700C. We remove the cream from the fridge and we mash the greek Christmas honey cookies. We homogenize them with cream and honey and in the end, we garnish our tarts.
