BLINIS WITH GOAT CHEESE, SMOKED SALMON AND BRICK

Directions
For the Blinis dough, dissolve the yeast in half the amount of lukewarm water along with the sugar and set aside to activate. In a bowl, add the sifted flour and all the other ingredients and mix with the help of a wire, adding the yeast after it has been activated. We leave it covered in a cool place for about an hour until our dough doubles in size. Spread olive oil in a frying pan and add the dough to a 2 cm diameter steel ring and fry on medium heat. Cook for 1-2 minutes on each side. Remove and let it cool. To serve, spread each Blinis with goat cheese, add a piece of smoked salmon, and garnish with brick, lime fillet, and dill.

- 180 gr Vero Cretan Goat milk
- 200 gr lukewarm water
- 9 gr dry yeast
- 125 gr MILLS OF CRETE Soft flour
- 125 gr MILLS OF CRETE All Purpose flour
- 3 egg yolks
- 5 gr sugar
- 20 gr Refine Olive Oil ABEA
- 60 gr melted cow butter

- 250 gr Vero Cretan Goat cheese
- 300 gr smoked salmon
- Lime
- Brick
- Dill
