In a bowl we put the flour and we make a hole in the middle. We dissolve the yeast with a little sugar and milk and we put it in the hole and we cover with flour. We leave it for 20 minutes. We beat the rest of the sugar with the eggs, the vanilla, the lemon zest and the salt. We stir the two mixtures together and let them rest for 40 minutes. We stir the butter with the flour and then with the other mixture again and we leave 30 minutes. We wash the raisins in hot water and we mix them with the almonds and the candied fruits. We add the rum and we leave it until it is absorbed. We stir the two mixtures and we let them rest for 30 minutes. We divide the mixture into two and we make two sticks and we leave them for 20 minutes to expand. We bake in a preheated oven at 200 degrees Celsius for 1 hour and 30 minutes to cook. When they come out of the oven, we smear them with butter and we sprinkle with caster sugar.
