Βread in a roaster pan
In the first step (Poolish), we mix in a jar the flour, the water, and the yeast and we let it rest for 16 to 24 hours. In the second step, we mix all the ingredients in a bowl until they homogenize and we mix them with our hands for 5 minutes. At this step, we will have a fairly sticky dough. We leave the dough to rest for about 40-60 minutes. In the third step, with slightly wet hands we stretch the dough, and we fold it gently on the opposite side. We repeat twice, crosswise. We leave the dough to rest for about an hour and we do the folding process again. In the fourth step, we put our pot in the oven to be preheated to 250 degrees set to fan, on the bottom side of the oven. We transfer our dough in a floured parchment and we put it carefully in the roaster pan with the cap closed, and we bake for 15 minutes. Then, we remove the cap and we bake for another 13-15 minutes until it looks like baked bread. We let it rest on a rack for 30 minutes.
