Directions

We beat the sugar, butter, and vanilla in the mixer at medium speed. Once they are soft, we add the egg and beat it until it is absorbed. We put the flour with the baking soda and salt in a bowl. Then, we add the mixture slowly from the bowl to the mixer and beat it well. We place the mixture in the refrigerator for about 1 hour. For the filling, we put all the ingredients in the mixer except the heavy cream and beat with a whisk. As soon as the mixture is homogenized, pour the heavy cream so that we have a thick mixture. We put the mixture in a pastry bag and put it in the fridge.
We roll out a thin phyllo dough between two parchment papers. We cut with a round cake ring and bake in a preheated oven at 200 degrees for 6-7 minutes. We let them cool on a rack and then we smear the cream with the pastry bag on one cookie and close it with the second one.
