Directions

We beat the oil well with the sugar and the lemon zest until they become white. We beat the egg yolks with the lemon juice and we add almonds and vanilla. We mix the two mixtures and we add the flour, the baking powder, the cognac and the milk. We beat the whites until the become a meringue, we add them to the mixture and we mix them with a spatula gently. We butter a pan (round No. 38) and we put a non-stick paper. We bake in a preheated oven at 180 degrees Celsius for 40-45 minutes.

  • 200 gr Cow Milk VERO CRETAN
  • 200 gr Olive Oil Rafine
  • 150 gr almonds (mashed)
  • 50 gr cognac
  • 40 gr baking power
  • 8 eggs (without the yolks)
  • 2 lemon zest
  • 1 lemon juice
  • 3 vanillas
