In a bowl, mix the albumen, butter at room temperature, and sugar, and with a hand whisk, mix our mixture until it is homogenized and has the form of a thick cream. Then add sifted flour and continue until it is also homogenized. Finally, add the almonds and mix with a spoon. Line a baking tray with a silicone mold or baking paper and with a spoon, cut small balls of dough and place them on the baking tray, making sure there is at least 4 cm of space between them. Bake in a preheated oven at 160 degrees until they take on an intense golden color, about 10 minutes. When they are ready, remove them from the pan and let them cool.
