Directions

In a mixer we put the flour and 500 ml of water and mix until they are homogenized. We let them aside for half an hour doing autolysis. Then we add the yeast, the cocoa, and we gradually add the rest of the water and in the end the salt. Then we add the raisins and the cooking chocolate and mix. We let our dough rest for 10 minutes and make 1 fold from the inside out and let it rest for half an hour. We cut our dough into 4 equal parts and shape them into small breads. We let them in the refrigerator for at least 12 hours with a floured towel. We score the dough in the center and bake in a preheated oven at 220°C for about 40 minutes.

  • 40 gr cocoa
  • 7 gr yeast
  • 300 γρ. raisins
  • 200 gr cooking chocolate in drops
  • 20 gr salt
