Sfakiani pie with lamb, thyme honey and blueberries

Directions
For the dough, beat all the ingredients in the mixer bucket. Let the dough rest for 10 minutes. Divide the dough into 8 equal parts. Put a spoon of cheese in the center of each dough part, close it in a round shape and open it with a rolling pin on a floured surface. Finally, fry them with olive oil on medium heat. Roast the lamb in the hull with red wine, orange juice, thyme, and salt, wrapped in non-stick paper at 180C for 1 and a half hours. Then we debone it and we put it in two pies. Finally, we add a few drops of cheese, blueberries, honey, thyme, and beetroot sprouts.

- 500 gr MILLS OF CRETE Cretan Pie flour
- 200 gr water
- 1 tbsp cretan raki
- 1 tbsp Extra Virgin Olive Oil Organic ABEA
- 1 pinch of salt

- 500 gr Vero Cretan Goat cheese
- 1 kg lamb
- 1 glass red wine
- 1 orange
- 125 gr butter for the serving
- fresh thyme
- honey for the serving
- beetroot sprouts
- 30 gr salt
