PANCAKES FROM CAROB FLOUR WITH GOAT CHEESE, WALNUTS AND HONEY
Directions
Melt the butter in a pan. Put all the ingredients in a large bowl and as soon as the butter melts, add it too and mix very well with a hand whisk until you have a smooth mixture. Add the eggs and mix with the wire until they are completely homogenized with the rest of the dough mixture. Place a pan over medium-high heat. Wet some kitchen paper with olive oil and grease the surface of the pan. Once the pan is hot, add 2 spoonfuls of the batter to the center of the pan. Bake the pancake on one side, until small bubbles appear on its surface. Then, turn it on the other side with the help of a spatula and cook for another 1-2 minutes. To serve, place the pancakes one on top of the other, adding goat’s yogurt in between and then sprinkle with walnuts and honey.

- 100 gr MILLS OF CRETE Carob flour
- 150 gr MILLS OF CRETE All Purpose flour
- 5 gr baking powder
- 2 gr baking soda
- 70 gr melted butter
- 220 gr Vero Cretan Goat cheese
- 15 gr MILLS OF CRETE Carob honey
- 15 gr sugar
- 2 eggs
- Olive oil ABEA for frying

- Cretan thyme honey
- Grated walnuts
- Vero Cretan goat cheese
