We put the flour in a bowl, we make a hole in the middle and we break the eggs. We whip up the eggs and slowly we mix them with the flour. We start kneading until we get a dough that is homogeneous. We let the dough rest, covered, for about half an hour. Then we cut the dough into 4 balls and on a floured surface we start to roll each ball with the rolling pin, adding flour to it as needed so it doesn’t stick. When we have the dough in the desired thickness, we cut it in shapes, depending on the pasta we want to make. We boil the fresh pasta for 2-4 minutes, depending on their size. If we want, we can dry them and boil them in the future, leaving them hanging and without touching each other in a dry place for 1 day.
