Steamed bread buns

Directions
I dissolve the sugar and the yeast in the water. I put in a bowl all the ingredients for the buns, except for the olive oil, which I slowly add to it frequently and knead slightly, until I get a soft and smooth dough. I leave my dough in an oiled bowl to rest for about an hour. Then I flatten my dough and split into 80 grams pieces. I give the shape I like round or oval oblong and fold in the middle by placing a piece of grease sticks so that the dough does not stick and let it swell. I put in a saucepan, about 1/3 of it with water and boil, with a metal strainer, inside the buns on the colander without touching the water and cover with a lid and let it steam for about 22 to 25 minutes.

- 300 gr Soft flour
 - 200 gr Self rising flour
 - 200 gr Cow milk 3,5%
 - 100 gr Water
 - 50 gr Extra virgin olive oil Kolymbari
 - 20 gr Yeast
 - 60 gr Sugar
 - 10 gr Salt
 - 5 gr Thyme powder
 FOR FILLING
- 500 gr Apaki (smoked pork) cut into small cubes
 - 10 gr Extra virgin olive oil Kolymbari
 - 50 gr White balsamic cream
 - Lemon juice
 - Strained yoghurt
 - Lemon peel
