FOR THE GARLIC BUTTER

We mix the butter until it becomes creamy and the we add the garlic, salt and parsley.

FOR THE DOUGH

We put the whole amount of flour, 400ml water, yeast, poolish in a mixer and we mix at low speed. As soon as the ingredients are homogenized, we gradually add the water and just before the end we add the salt and we mix on high speed. Then we make two folds from the outside to the inside every half hour. During every half hour of waiting, we store in a closed bowl. We cut into pieces of 350 grams and shape into a baguette. We store in the refrigerator with a floured towel overnight. We score the dough and bake in a preheated oven at 220°C for about 20 minutes. We cut in half and put a small amount of garlic butter and put it in the oven (grill) for about 10 minutes.

  • 100 gr garlic cloves without their root

  • 1 kg MILLS OF CRETE Hard flour
  • 200 gr poolish ( see focaccia recipe )
  • 600 ml water
  • 20 gr salt
  • 7 gr yeast
