Directions

In a saucepan, we heat (not boil) the sugar, the butter, the milk, and the mastic. When it is ready we
remove it from the fire and we pour the eggs. We dissolve the yeast in lukewarm water and we mix the two mixtures together. Finally, we add the flour and we knead until the dough does not stick to our hands. If necessary, we add a little bit more flour. We make a ball, we cover it with a towel and we leave it in a warm environment for 2-3 hours until it doubles. Lightly we knead again by hand and we divide the dough into 3 equal parts. We make sticks and we knit them in braids. We place them on a baking dish with a baking sheet. We cover and we leave it in a warm environment again for at least one hour until the shape is doubled. We beat the eggs and carefully we spread the surface of the Easter bread. We sprinkle with the almond and we cook in a preheated oven at 180 degrees Celsius for about 1 hour until the bread has browned and peeled off the wafers.
