Christmas wholemeal buns with chocolate, raisins and hazelnuts
Directions
I dissolve the yeast in the water with sugar and 4 pounds. of bun flour, and I let the yeast be activated. In a bowl I add all my wet ingredients except butter and I homogenize them, then I add the yeast mixture. I add the flour and I knead well, I add the iced butter chopped in small pieces and I continue the kneading until I get a smooth and supple dough and at the end I add the hazelnuts, the raisins and the chocolate and I continue kneading. I leave the mix in a warm place to double. I divide my dough in pieces of 80 grams. and I create small round balls, I put them on a baking sheet and I let them to expand, then I bake in a preheated oven at 160 degrees Celsius for 35 to 45 minutes.

- 80 gr yeast
- 100 gr water
- 250 gr sugar
- 200 gr Strained yogurt VERO CRETAN
- 3 eggs
- 100 gr Cow Milk VERO CRETAN
- 300 gr iced butter
- 100 gr grated baking chocolate
- 100 gr hazelnuts chopped in large pieces
- 100 gr raisins
