For the tarts we mix all the ingredients well and we add the yolks in the end. We let the dough rest for 20 minutes. We mold the tarts and fill them with legumes to prevent them from expanding. WE Bake for 15 minutes at 170 ° C. For the filling we cut the leeks lengthwise and then widthwise into thin strips. We sauté the shrimp in the olive oil, we add the leeks, the spices and we quench with the wine. We drain the mixture, we mix it with the grated feta and spread it on the tarts. We mix the milk with the eggs and we pour in the tarts. We bake for 40 minutes at 170 ° C
