Directions

We lightly whip the eggs and the water with the wire. We pour in all the flour and we whip the mixture gently until the batter becomes homogeneous. We heat a lot of oil in a deep frying pan (the height of the pan is about 5 centimeters). We put the vegetables in the batter so they are well covered and when the oil becomes hot, we put them in the pan and we fry for 3-4 minutes until they become crispy and get a nice golden color. We drain them on absorbent paper and we add salt. We serve immediately!

  • 65 gr sifted Frying Flour MILLS OF CRETE
  • 2 eggs
  • 125 gr cold water
  • 1 eggplant chopped in large strips
  • 125 gr sweet pumpkin chopped in large strips
  • 125 gr chopped broccoli
  • 1 red pepper (without its peels, chopped in strips)
  • 125 gr asparagus
  • salt
  • Olive oil for the frying
