Directions
We whip up in the mixer or in hand persistently the ingredients of the a’ mixture until they soften well. We add the b ‘mixture. Outside of the mixer we homogenize – with the help of a flexible spatula, the mixture c ‘with the uniform mixture from the mixtures a’ and b’. Finally, we add the ingredients of the d’mixture while stirring gently. We bake in a preheated oven 170 – 175 degrees Celsius for 45 minutes.

- 250 gr cow butter
- 125 gr stakovoutiro (butter from staka)
- 100 gr Extra Virgin Olive Oil ABEA
- 15 gr salt
- 15 gr sugar
- 1 lemon zest
- 1 tablespoon black fresh pepper in large pieces
B' MIX
- 600 gr eggs
D' MIX
- 630 gr All purpose flour MILLS OF CRETE
- 40 gr baking powder
D'MIX
- 300 gr Cretan white cheese (like feta cheese)
- 200 gr graviera cheese
- 200 gr smoked cheese from Metsovo
- all the cheese should be coarse grated in hand
