Directions

We whip up in the mixer or in hand persistently the ingredients of the a’ mixture until they soften well. We add the b ‘mixture. Outside of the mixer we homogenize – with the help of a flexible spatula, the mixture c ‘with the uniform mixture from the mixtures a’ and b’. Finally, we add the ingredients of the d’mixture while stirring gently. We bake in a preheated oven 170 – 175 degrees Celsius for 45 minutes.

  • 300 gr Cretan white cheese (like feta cheese)
  • 200 gr graviera cheese
  • 200 gr smoked cheese from Metsovo
  • all the cheese should be coarse grated in hand
