Directions
For the dough, mix all the ingredients together until a relatively firm dough forms.
For the filling, start by sautéing the vegetables, namely the onion and carrot, and let them cook for 2–3 minutes until they soften. Add the minced meat and continue sautéing. Then add the tomato paste to sauté it as well, and once it takes on some color, deglaze with the wine. Add a little water if needed so the meat can cook properly, then add the herbs and lightly season with salt. Let it cook until the liquid is absorbed and the mixture becomes relatively dry.
Roll out the dough using a kalitsounia machine, fill, and fry.

- 500 gr MILLS OF CRETE Cretan Pie flour
- 170 gr water
- 2 gr salt
- 50 ml olive oil
- 10 ml cretan raki
FOR THE MINCED MEAT
- 1 kg ground beef
- 2 carrots, very finely chopped
- 2 small white onions, finely chopped
- 2 sprigs rosemary
- 2 bay leaves
- 5 allspice berries
- 5 peppercorns
- 100 gr tomato paste
- 200 ml red wine
