We put in a bowl the yeast, sugar and a little lukewarm water. We let the mixture froze and then we add half of the flour, salt and 250 ml of water. We knead at moderate speed for 5 minutes. We cover the bowl with a damp cloth and we let the mixture rest for 5 hours. We add the remaining flour, water and we knead at moderate speed for 10 minutes.
We spread oil at the bowl, we cover it with a wet cloth and we leave it all night. We cut the dough into three, we make the baguettes, we add olive oil, we sprinkle with flour and we bake in the oven while we put another shallow baking dish with hot water for about 20 minutes at 190 ° C.
