We prepare the dough. In a bowl, we add the olive oil, tsikoudia and we mix, we add the salt and the yogurt and when the yogurt is dissolved, we put slowly the flour. We knead until we have a flexible dough. We let it rest covered with a towel for half an hour and we prepare the filling. In a bowl, we break the cheese in pieces with a fork and we rub the tiromalama. We add the egg and the mint and we mix to homogenize all the ingredients together. We divide our dough into 6 balls and we start to roll out a very thin phyllo with the rolling pin. When phyllo is ready, we cut little circles with a Greek coffee plate or a small plate. At the center of each circle, we put a tablespoon of cheese and we close the dough like a small envelope. We spread all the kaltsounia with egg and we sprinkle with sesame seeds. We bake at 180 ° C for 25 minutes.
