Directions

We stir the yeast with lukewarm water and a little bit of flour until it becomes a thick slurry and we let it rest for 30 minutes in a warm place. We beat all the other ingredients except the butter and we add the yeast slurry to the mixture. We knead, while slowly adding the melted butter until we get a uniform dough. We cover the dough and we leave it in a warm place until it doubles in volume for about 2 hours. We make the breads in the desired shape and we place them in a non-stick baking dish. We let them expand, for about 1 hour. Gently we smear with egg and we sprinkle with almonds.
We bake at 160 degrees Celsius for 35-40 minutes.

  • 1 kg Bun Flour MILLS OF CRETE
  • 90 gr liquid yeast
  • 350 gr sugar
  • 100 gr lukewarm water
  • 125 gr butter
  • 4 eggs
  • 125 gr Cow Milk VERO CRETAN
  • 2.5 gr mashed mastic
  • 2.5 gr mashed mahleb
  • zest from half of an orange
