We put the yeast, sugar and some lukewarm water in the bowl of the mixer. We let the mixture to foam for about 20 minutes and then we add the flour, salt and water. We knead at moderate speed for 5 minutes and we add the olive oil. We cover the bowl with a damp cloth and we let the mixture rest for about an hour. We divide our dough into three and we piece together one of the pieces of olives. We chop the pepper and the sun dried tomatoes and we join the ingredients to the second piece. We cut small pieces of onions, we sprinkle with thyme and we join it to the third piece of dough. We create small breads and we put them in a baking sheet on the pan. We leave them for another 40 minutes covered. We uncover them and we spread with oil, we cut and we bake at 190 ° C for about 35 minutes.
