Directions

We stir the eggs, the butter and the yeast with the lukewarm milk. We add the sugar and the flour to the mixture and we knead in the mixer for about 20 minutes until the dough sticks out of the mixer. We leave the dough covered in a warm place for about 1 hour. Then we add the raisins, the dried fruits and the lemon zest and we knead for 10 minutes. Optionally, we can add 4 yolks (saffron) for a bright yellow color and a nice flavor. We put the dough in a panettone form (or in a round, deep and narrow dish that has been buttered) and we leave it covered in a warm place for about 1 hour. We bake at 170 degrees Celsius until it browns for about half an hour.
